Happy Easter!

I know, it's been a while. Deal with it.

Today is Easter Sunday! Tomorrow I have an exam!

Normally today would be full of awesomeness but instead I will be spending a big part of it studying. Just like the past 4 days. Such is life.

In happier news today is a holiday and holidays make me happy! I woke up this morning and while I was making some breakfast, the 'Easter Bunny' made a chocolate egg hunt for me in my room! It didn't take very long to find all of the eggs but it was still fun. We had a nice breakfast of Banana bread (recipe to follow) and bacon-cucumber-tomato sandwiches. Oh yes and peppermint tea - I recommend it!

So my Easter started off pretty decently. But everyone knows the best part of any of these holidays is dinner. Thanksgiving, Christmas, Easter, dinner makes these holidays. Me being the petite chef/scatterbrained nutso...I decided at 1pm that I wanted to make a nice dinner. Yay Erica...Nothing is open today!! So now we are making dinner from things I have in the house. It's not so bad, check out our menu:

-Mashed potatoes! Extra creamy...but not with milk because there is barely any milk
-Green Beans! Ya frozen vegetables!
-Cranberry chicken! (posted the recipe a while back!)
-Yorkshire pudding! Yes, I know you are supposed to eat this with roast beef but I just don't have a roast beef in my fridge. And I needed another side...and it is only really flour and eggs. Recipe from 'Joy of Cooking'
-Strawberry-Rhubarb pie! I have both of these in the freezer AND I have pie crusts that my mom so lovingly made when she was here back in February.

Not a bad last-minute menu if I do say so myself! It's kind of mixed-matched but I'm ok with that. It's all good food and my goodness I like good food!

So that's my Easter. I will be doing homework until about 4pm when I will start cooking. Oh, another perk to this meal is that none of it takes very long to cook. More time to study!

Beyond cooking and studying I have no been very active. The intramural hockey team I'm on won our tier! That was awesome, we only won one game in the regular season and then we went on to win all 3 of out play-off games. That felt pretty good, our team really started to come together towards the end - way to go guys!

Well I hope everyone has a super great Easter full of family and FOOD!! Mine will not have any family but good friends will fill in just fine...and I will have food. Happy Easter!!

My Mom's Banana Bread

If you double the recipe, it makes 3 loaves. I always double the recipe.

1 cup White Sugar
1/4 cup Oil (vegetable or canola preferred - never bake with olive oil!)
1 egg
1 cup mashed banana (If frozen, microwave for 20 secs, slice open peel and squeeze out banana)
1/2 cup milk
1+3/4 cup Flour
1/2 teaspoon Baking Soda
1 teaspoon Baking Powder
3/4 teaspoon Salt
1/2 cup chocolate chips/raisins/walnuts - any combo works

Mix sugar, oil, egg, banana, milk
In a separate bowl, combine flour, baking soda and powder, salt

Gradually add dry to wet, stirring until just combined.
Add chocolate chips etc.

Grease/spray 8x4" loaf pans

Bake at 350 for 50-60 mins.

If you put all 3 loaves in at the same time it will take a full hour to cook.
Freezes very well for up to 6 weeks.
